More Meals

Our first week, we did very well with meal planning.  We didn't have a ton of leftovers for Sawyer's or our lunches, but hey - one hurdle at a time, right?  Dinners were good.  We mixed the days around a little fit our schedule, but I will tell you all of our new recipes were delicious!  My favorite was the shrimp and grits casserole.  I served it with simple steamed broccoli and it was so great.  I had it leftover a few days later and it was still good then too (I always get weirded out by leftover seafood, but the shrimp did fine).

Last week we weren't as disciplined (also had to do with me putting off grocery shopping until Wednesday night), but we did still mostly eat at home.  Kinda.  I didn't even print off a weekly menu.

Sunday - Shrimp and Grits Casserole with Steamed Broccoli
Monday - I don't remember but I know we didn't buy anything, so sandwiches, leftovers or cereal. :)
Tuesday - Same as above.
Wednesday - Chickfila... oops.
Thursday - Went to the opening of Uchi!
Friday - Coconut Chicken Salad with Dijon Mustard Vinaigrette

Saturday - Chili's
Sunday - Pizza (it was the Super Bowl - had to!) and "Easy" Brownies

A layered brownie of chocolate chip cookie, Oreos and chocolate fudge brownie, topped with Blue Bell, of course.

So, not our greatest week.  But that's okay!  Starting fresh this week...

Monday - Craft Night (No Cooking!)
Tuesday - Baked Chicken Parmesan with Sauteed Spinach
Wednesday - BBQ Cups* with Fruit Salad
Thursday - Aunt Marjorie's Chicken Casserole* with Veggies
Friday - Leftovers/Sandwiches
Saturday - Breakfast for Dinner
*old family recipes - I'll share next week!

We'll see how it goes this week!
