Meal Planning

Meal planning is not one of our strong points as a couple - I am often exhausted once Sawyer is in bed and can't stand the thought of cooking a real meal; Jeremy hates always doing sandwiches or cereal (which I could live off of!), so more often than not we end up driving through somewhere or getting take-out.  It wasn't really a resolution, we just knew we could do better with some advance planning!




I made this little meal planner so I could see on actual paper what I had to cook or prepare for the week.  Hopefully it helps!  Sunday afternoon, after stocking our pantry and fridge, I cooked chicken and made King Ranch Chicken casserole and the filling for Chicken Roll-Ups and froze both to use later this week.  Both make great leftovers, too, so that should cover some lunches and even maybe dinners early next week.  Since I cooked a lot Sunday night, we just had biscuits with bacon marmalade and cereal for dinner.  The rest of our week is as follows:

Monday - Wine Night + The Bachelor with friends
(meaning, I'll eat something quick and Jeremy is on his own!)

Tuesday - King Ranch Chicken + Veggies


Thursday - Chicken Roll-ups + Veggies

Friday - Shrimp & Grits Casserole + Steamed Broccoli

Saturday - Leftovers (KRC or Chicken Roll-ups)

In addition to making some easy dishes, Jeremy and I each picked a new dish to try this week (Jeremy - spaghetti, me - shrimp & grits, of course!).  And I'm hoping some or most of these things Sawyer can eat with us or take to school for lunch.  Here's hoping it's something we can stick with!
