Pinterest Recipe Day: Caramel Apple Cookies

Yes, that's right, it's time for another tried and true Pinterest recipe!

Jeremy and I were searching for the perfect fall baked good and decided this recipe seemed simple enough.  As it says, I actually did have all the ingredients at home except for the caramels and apple cider packets.  Easy!

A few notes:
-The dough tastes suuuuuuper apple-y with all 10 packets of cider mix, but it ends up tasting great when they're baked!
-The best way I found to get the caramel in the middle was to scoop dough out with a spoon, flatten it in my hand, press the caramel in the center, then roll it in a ball so it's a perfect sphere of dough.  They bake out pretty well from there.
-Parchment paper is required.  Seriously.
-It really makes a difference to let the cookies sit on the parchment paper for a little while (but not too long!) after baking.  Taking them off too soon can rip off the bottom and the caramel will leak out.  Let them firm up and twist them off ever so carefully and your cookies will be perfectly intact!

We loved these cookies, and might make them again for the holidays - give them a try!
